I can't figure out why only some of my bike rides show up in strava, while strength training and walking seem to always show up.

Hi
in the Strava app, go to tab You > gear wheel in top right to open Settings > Manage apps and devices > Health. You should see all workouts from last 90 days, those already synced with a checkmark, and those not synced with an “Import” option. You can tap “Import” to force-sync each of the activities, just wait for the sync to get completed (checkmark to appear) before you quit that screen.
