Neither Apple Fitness nor Mi Fitness are sending over GPS data to strava when I record activities on those watches, it only works when I use the dedicated Strava app on my Apple watch. Does anyone know why this is?

I’m not familiar with Mi Fitness but I’m using the native Apple workout app and the syncing has been working well. It sounds like you might want to double check the permissions in the Health app (the Sharing tab, scroll down to apps & services, find Strava and allow all), here's some details:
