I import data from my Apple Watch. But no matter what I do — turn off phone, turn off watch, log out of app — I haven’t been able to get anything to upload since June 7. Once or twice when I’ve turned off the phone one workout appears to be imported (I’ve done more than one since then) but it disappears when I try to click on it. Any advice gratefully accepted!

to clarify - are you using the Strava app on your AW to record the activities, or the Apple workout app and sync to Strava only afterwards?
If it's the latter, and if the regular sync process keeps failing, you can use one of the data importers - personally I like RunGap. Though this is a workaround, not an actual solution.
In general, you might also want to try uninstall Strava and install again (just in case that the app got somehow corrupted), but if you were recording with Strava, I’d be a bit worried that the reinstall would delete all app data (i.e. you’d lose the unsynced activities). If you recorded with the Apple workout app, you’re good to go with Strava reinstalling, it won't touch the Apple Health data.

Okay, so as the first step, try uninstalling Strava and installing it again. No data will be lost, as Strava stores your already uploaded activities online, and the Apple Health data (where your recorded activities are) is not affected by the reinstall.
That should fix whichever corruption could have happened to the app, and also re-prompt you to allow all needed permissions. You can also double check the permissions in the Health app (tab Sharing, scroll down and tap services & apps, find Strava, and allow all options).
Using a 3rd party app would be just a workaround if the above doesn't help - RunGap is paid (quite inexpensive but not free), not sure about other ones, it might be worth exploring.
