I use a new iWatch to capture heart rate data. Notice how there are long periods of time when the data is not being continuously imported. Any suggestions on how to fix?

by iWatch, do you mean Apple Watch? Or yet something else? You could be using some kind of power saving mode with less frequent HR readings.
Regardless of the actual watch:
- make sure that the wristband is correctly tightened, not too loose
- if you're on the southern hemisphere / cold area, don't let your wrist freeze (keep it covered with a long sleeve), otherwise your capillaries shrink and the optical sensor won't be able to read the HR properly
- if you have tattoos on your wrist, consider wearing the watch on the other hand
