This option exists, you can save your ride as a gravel ride. However all unmotorized ride types share the same segment leaderboards.

Thanks for your post.  As @Jan_Mantau mentioned, we do have an Gravel activity type on Strava.  

If you're interested in separate segment leaderboards for different types of rides, I would encourage you to add your vote and any comments you have to this existing idea.
