It would be much more informative and interesting (IMO) for Strava to show the "final" weather conditions, rather than the beginning conditions.

Rides always start out in weather that you're prepared for, but it's how they end that makes them memorable.

Thanks for submitting your idea to display the weather conditions at the end of the activity instead of the start. It has been reviewed by our moderation team and is now open to voting.

The temperature in the activity analysis graph does show how it fluctuates throughout the activity when toggled and the temperature map style also helps highlight the changes.

Only both (weather at start and end) would make sense. One of them usually paints a very wrong picture, regardless if at the start or the end. Maybe the Strava guys live in areas with very constant weather so they never thought about that on most parts in the world the weather can change verily in a few hours.
