If you don't mind, could you expand on what you mean by "keep track of days skied over the winter".
I may be able to point you in the right direction.

I'm pretty sure they are asking to track/count the number of days a ski activity was recorded during winter. So not reset on a calendar year but instead at the end of a "season" (e.g. October-May/June for northern hemisphere).

To my knowledge Strava doesn't have such a feature but some apps that connect with Strava do.

Thanks for your post.  You can accomplish this by using the Strava Training Log

The Training Log allows you to filter by activity type (in this case alpine ski) and then see the activities plotted on a calendar. It's a great way to keep track of how often across a given month/year you're doing a particular activity.
