calories and ebike ride

Using an Apple Watch for tracking cycle workouts with e-bike but obviously it has no idea about my usage of throttle or pedal assist.  When I import into Strava and set the ride type to e-bike or e-mountain bike, does that do anything to the data or is it just tagging that exercise with the type?  Or if I track via Strava, how does it utilize the e-bike type, does it use it to calculate calories?
 

if so, is it best to just use Apple Watch through a HIIT workout to track heart rate and let Strava track the bike ride/route information?

So reading through the doc it appears I can get a more accurate bike calorie calc by setting my body info and bike weight.  But for e-bike, there is no real way for the app/watch to know obviously whether I am throttling or pedal assist.  For e-bike and calc, does Strava just track heart rate, since momentum/speed are not accurate of my output?
