As one of the purest forms of endurance sport and community I think single-speed mountain biking should be offered as an activity type. It is manifestly different from other forms of mountain biking and deserves to be represented in Strava.

You already have arcane and odd activity types that really seem so misplaced e.g. golf. Competing in segment leaderboards and KOMS with a single speed should be noted and characterized differently. I hope you choose to consider single-speed moutain biking.

I can definitely support single-speed bikes being a sub-category within the "ride" category, the same as mountain bikes, gravel bikes, etc...  What would not work is to break them out into a whole separate activity type since that would establish a new set of leaderboards for segments.  The reason that would not work is that there is over a decade of rides people have already input into Strava that did not have that designation available.  The new leaderboards would not include any of those rides from the past where people rode single-speed bicycles but did not designate them as such.  This would mean you would have single-speed rides all over in the other "ride" leaderboards and a lot of KOM level rides from past activities on single-speed bikes that would not be represented in the new single-speed category.
