New to the forum, apologies if this has been asked and addressed already.

As a cyclist there are lots of segments around and they're a great goal to aim for.

However with cycling would it be possible for segments to be separated, so those on MTB, Gravel and road bikes would have their own respective leader boards and KOMs/QOMs?

It would be impossible to know with any reliability what type of bike someone actually used.  Only a small percentage of Strava users actually designate different types of bikes in their profiles and many of them still forget to update their activities with the bike they used frequently.  Considering that they didn't have these different bike types separated for the first decade or so of Strava, you would have all of that old data in the system without any designation to deal with too.  Overall, if you tried to create separate leaderboards for each bike type, they would all be full of rides from people who mislabeled their rides or just didn't designate a specific type at all.
