Try changing the date via the website rather than in the app, here:

If the date is locked, you might need to wait - the birthday change frequency is limited, apparently people were trying to cheat in the leaderboards by frequently changing their age group. I'm not sure how long the lock lasts, but I’d give it 24 hours before trying again.
