I’m recovering from a stroke, so can only walk, but if I go into My Activites I only see distance and time, I t would be useful to have Average speed too, and for me, Average Pace length

when you open the Walk activity in the mobile app, scroll to the very bottom, you should see those details you've mentioned. This is what one of my recent walks looks like:
