Hi in fat map there was loads of great ski routes for back country as well as route descriptions for these and on pist descriptions. Are we going to see these returning to Strava? As there's running and biking routes so should be skiing?

Hey
You can create routes for winter sports on web. You’ll still be able to use winter sport routes created on web on mobile. The created route will be in your Saved Routes list just like any other route.
We also recently added Winter Sports to the Map Only version of the Maps tab, so if you would like to browse Global, Weekly, Night, or Personal Heatmap data from the app, you’re able to do so.
Tap routes in the top left and select map only from the dropdown menu.

You may have better luck searching on the web version of Strava for shared routes.
Unfortunately, as your screenshot shows the winter sports category currently isn’t available on the mobile app.
