It appears that there’s been a recent change which applies auto-pause to kayaking, but I suspect it uses cycling parameters, which are not appropriate for kayaks (which move more slowly than bikes). I record my kayaking outings on my iPhone. In my most recent kayak outings, Strava auto-pauses almost immediately and then never unpauses. I’ve used Strava for years and this never happened until now.

My settings: I have auto pause enabled for cycling, but turned off for running. There doesn’t seem to be a way to control auto-pause for other sports.

In this case, I recommend turning off the Auto-Pause feature during your Kayak activities because Auto Pause looks at GPS & Motion to detect when you are at rest. Since your activity is in water, I fear the feature may not always be able to accurately detect when you are moving or not.

The bug seems to have been fixed - my most recent two kayak outings worked again (as kayaking did for years until recently).

 

Alas, there are on/off toggles for auto-pause only for Runs and Rides; for other sports it appears the user is stuck with whatever option the developers set for that sport.
