Strava, can you please provide an ETA on when it will be possible to select Sunday as the start of week? This key missing feature is driving many, many, MANY users bonkers!!

when you look up the related idea (feature request), it will tell you that it's currently not planned, meaning that there's no ETA:
You can add your vote though, just in case Strava product managers change their mind in the future.
