On a regular basis my 30min to 60 min workout session syncs as only a few seconds when I finish the activity, despite the full session appearing on watch.
I am using a Samsung Watch, I initiate and end the session in the Strava app on the Watch.. there is never any issue with what is displayed in App on the Watch, however, when the activity is uploaded to strava, instead of the full session only a few seconds are uploaded. Very frustrating and I am sure I am not pausing sessions.
Has anyone experienced this?

Sorry this is happening. Can you try using your watch to record an outdoor, GPS based activity? It doesn't have to be long. Once you do that, your watch should be able to record correct times for indoor, non-GPS activities.
Please give that a try and let us know if it resolves the issue.
